Ingredients

  • 4 large russet potatoes about 1.2 kg
  • 60 g unsalted butter 4 tbsp
  • 120 ml sour cream 1/2 cup
  • 100 g grated cheddar 1 cup
  • 30 g chives or scallions chopped (1/4 cup)
  • Salt and black pepper to taste

Instructions

  • Bake whole potatoes at 200C/400F until tender.
  • Cut and scoop centers, mix with butter and sour cream, season.
  • Refill skins, top with cheese, bake until golden and bubbly.
