- 4 large russet potatoes about 1.2 kg
- 60 g unsalted butter 4 tbsp
- 120 ml sour cream 1/2 cup
- 100 g grated cheddar 1 cup
- 30 g chives or scallions chopped (1/4 cup)
- Salt and black pepper to taste
Bake whole potatoes at 200C/400F until tender.
Cut and scoop centers, mix with butter and sour cream, season.
Refill skins, top with cheese, bake until golden and bubbly.
