- 4 large russet potatoes
- 60 g unsalted butter
- 120 ml sour cream
- 100 g sharp cheddar grated
- 2 spring onions
- 100 g cooked bacon chopped
- Salt and black pepper to taste
Preheat oven to 220C/425F and bake potatoes until soft.
Slice and scoop out flesh, leaving shells.
Mash flesh with butter, sour cream, and cheese.
Fold in bacon and spring onions, refill shells.
Top with cheese and bake until golden.
