Ingredients

  • 4 large russet potatoes
  • 60 g unsalted butter
  • 120 ml sour cream
  • 100 g sharp cheddar grated
  • 2 spring onions
  • 100 g cooked bacon chopped
  • Salt and black pepper to taste

Instructions

  • Preheat oven to 220C/425F and bake potatoes until soft.
  • Slice and scoop out flesh, leaving shells.
  • Mash flesh with butter, sour cream, and cheese.
  • Fold in bacon and spring onions, refill shells.
  • Top with cheese and bake until golden.
