Ingredients

  • 4 large russet potatoes - about 800g total
  • 2 tbsp olive oil - 30ml
  • 1 tsp coarse sea salt - 5g
  • Freshly ground black pepper - to taste
  • Butter or alternative - 60g

Instructions

  • Wash and prick the potatoes; rub with oil and salt.
  • Microwave on high for 5-7 minutes per side until tender.
  • Finish under the broiler or in a hot oven for 5 minutes for extra crispness.
  • Split open, fluff the flesh with a fork and season, then serve hot.
