Curly Fries

- 900 g russet potatoes
- 2 tbsp kosher salt
- 1 cup all-purpose flour
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne
- 500 ml neutral oil
- cold water
Cut potatoes into spirals.
Rinse spirals under cold water.
Blanch spirals for 3 minutes.
Steam-dry and toss in flour and spices.
Fry at 180 C until golden.
Drain and season with salt.
