Ingredients

  • 900 g russet potatoes
  • 2 tbsp kosher salt
  • 1 cup all-purpose flour
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne
  • 500 ml neutral oil
  • cold water

Instructions

  • Cut potatoes into spirals.
  • Rinse spirals under cold water.
  • Blanch spirals for 3 minutes.
  • Steam-dry and toss in flour and spices.
  • Fry at 180 C until golden.
  • Drain and season with salt.
