- 900 g Yukon Gold or Russet potatoes
- 240 ml unsweetened oat milk
- 60 g vegan butter
- 2 tbsp olive oil
- 3 cloves garlic
- 1 tsp fine sea salt
- Freshly ground black pepper
- Chives or parsley for garnish
Peel and cube potatoes, place in cold salted water.
Bring to boil, simmer until fork tender.
Drain and return to pot over low heat to evaporate excess moisture.
Rice or mash potatoes until smooth.
Fold in warmed oat milk, vegan butter and oil, season and serve.
