Ingredients

  • 900 g Yukon Gold or Russet potatoes
  • 240 ml unsweetened oat milk
  • 60 g vegan butter
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 tsp fine sea salt
  • Freshly ground black pepper
  • Chives or parsley for garnish

Instructions

  • Peel and cube potatoes, place in cold salted water.
  • Bring to boil, simmer until fork tender.
  • Drain and return to pot over low heat to evaporate excess moisture.
  • Rice or mash potatoes until smooth.
  • Fold in warmed oat milk, vegan butter and oil, season and serve.
