- 500 g Russet or Maris Piper potatoes peeled and cut into 0.6cm matchsticks
- 1 tbsp white vinegar
- 2 tsp fine sea salt
- 500 ml neutral frying oil canola or peanut
- 1 tbsp dextrose or sugar
Cut potatoes into uniform 0.6cm matchsticks, then rinse in cold water to remove surface starch.
Blanch in 85°C water with vinegar for 8-10 minutes until barely tender, then shock in ice water.
Dry thoroughly, toss with dextrose and half the salt, then freeze on a tray for at least 30 minutes.
Fry at 160°C for 4 minutes until pale and soft. Drain and cool, then refry at 175°C until golden and crisp.
Toss immediately with remaining salt, serve hot with a faint sweet and toasty aroma.
