Cheese Fries

Crispy roasted fries finished with a smooth cheddar cheese sauce.

Ingredients

  • 500 g russet potatoes
  • 2 tbsp vegetable oil
  • 200 g sharp cheddar grated
  • 100 ml whole milk
  • 1 tbsp unsalted butter
  • 1 tbsp plain flour
  • Salt and cracked black pepper
  • Chopped chives or parsley

Instructions

  • Parboil fries for 4 minutes, drain and steam dry.
  • Toss with oil and roast at 220C/425F until golden.
  • Make a roux, whisk in milk, then add cheese off the heat.
  • Pile fries, drizzle cheese sauce, garnish and serve.
