Cheese Fries
Crispy roasted fries finished with a smooth cheddar cheese sauce.

Servings: 4 servings
- 500 g russet potatoes
- 2 tbsp vegetable oil
- 200 g sharp cheddar grated
- 100 ml whole milk
- 1 tbsp unsalted butter
- 1 tbsp plain flour
- Salt and cracked black pepper
- Chopped chives or parsley
Parboil fries for 4 minutes, drain and steam dry.
Toss with oil and roast at 220C/425F until golden.
Make a roux, whisk in milk, then add cheese off the heat.
Pile fries, drizzle cheese sauce, garnish and serve.
