- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 300 ml lager or amber beer
- 240 ml whole milk
- 110 g cream cheese
- 170 g sharp cheddar grated
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1/4 tsp cayenne or hot sauce
- Salt and freshly ground black pepper
Melt butter and whisk in flour, cook 1-2 minutes.
Slowly whisk in beer and milk until thickened.
Lower heat and stir in cream cheese until smooth.
Remove from heat and whisk in grated cheddar, add seasonings.
